If development on Goose Island picks up, Passion House could be seen as a pioneer. The prospect of pouring more coffee to Chicagoans excites Millman as he continues to build his company. I grew up in a suburb outside of Chicago, and inspired by the Beatnik generation and their commitment to community and conversation, I chose to immerse myself in everything that Chicago had to offer.
Last month, it opened another cafe inside Politan Row, the West Loop food hall that shares a building with McDonald’s Corporation’s headquarters. Later this year, Passion House will move its roasting operations from Fulton Market to East Garfield Park. They’re sharing the facility with Veteran Roasters, a company that helps vets get jobs after their time in the armed forces. At Passion House, we strive to create balanced and complex coffees with our meticulous method of sourcing beans from farms around the world and roasting them by hand on a vintage 1957 German Probat cast-iron roaster. Over the last two decades, coffee has taken me around the globe, exposing me to various cultures that will forever have an impact on my life.
The amount of care, attention, and hard work that goes into producing quality coffee; getting it from the ground to the cup; is something we are very passionate about and take serious. In addition to overseeing the whole roasting works, he invests a lot of time building relationships with farms and importers all over the world. Go Get Em Tiger is the growing coffee empire by Kyle Glanville and Charles Babinski, a duo whose original G&B Coffee stall just so happens to be its own staple at Grand Central Market. With eight locations currently running throughout the city, Go Get Em Tiger has fast become a hometown chain with consistency, but with enough charm and nuance at each outpost to keep things fresh. Customers can choose from to-go goods and grab-and-go bottles of house-made cold brew, or take a patio seat to take in the funky, fun spaces with pastries, brunchy bites and retail items.
